Cottage Cheese Blueberry Muffins
This one bowl, protein-packed, blueberry, blue spirulina & cottage cheese muffins come together super fast. They are slightly sweet, a tad savoury, and a lot of yummy. Be warned, you won't eat just one.

- 1 Silicone muffin tray
- Measuring cups
- Measuring spoons
- Spatula
- Whisk
- Spoon
Ingredients
- 1 Cup Cottage Cheese
- 2 Eggs
- 1/2 Cup Milk Or milk alternative
- 2 Tsp Maple Syrup This is optional
- 2 Tsp Baking Powder
- 1.5 Cup Flour
- .5 Tbsp Blue Spirulina This is optional, but adds extra nutrition and a fun pop of colour
- 1.5 Cup Fresh or Frozen Blueberries You can use any berries, but raspberries and blackberries are a bit messy
Instructions
- Pre-heat the oven to 400 degrees.
- Pull out all ingredients.
- In a mixing bowl mix cottage cheese, eggs and milk. If you are adding maple syrup add this now.
- Mix in baking powder, flour.
- Fold in Berries, and blue spirulina
- Use a spoon to add to a silicon muffin tin.
- Bake for 12-14 min!
- If you are impatient like us and want to sizzle your fingers, you can pull them out of the muffin tin and eat right away OR let them sit to cool for about 5-10 min then pull them out to eat or cool on a rack.
Notes
Serve on their own, or mix honey, salt and butter together for a treat!
