Anytime Sugar-Free Cookies
These sugar-free cookies are so versatile and can be served for breakfast, a snack or an after-dinner treat. Equipment
- Baking tray
- Measuring cups/spoons
- Parchment paper
- Mixing bowl
- Spoon and fork
Ingredients
- 2 ripe bananas
- 1.5 cups cups rolled oats
- 1/2 cup cup nut butter (we used peanut butter, but pumpkinseed or sunflower, and almond butter work great)
- 2 tbsp hemp hearts
- 3 tbsp shredded coconut
- 2 tbsp optional: honey, maple syrup, or alcohol-free vanilla
- 2 tbsp optional: dried fruit, chocolate chips, flaxseed, and pink pitaya powder
Instructions
- Preheat the oven to 350 degrees and line a baking tray with parchment paper
- Grab a large bowl and add all ingredients
- Mix with a fork and spoon into 1-2 inch flat balls on the baking tray. Try topping with some flakey salt
- Bake for 10-12 min
Notes
These can keep in the fridge for a week, or you can also just let them cool and pop them in the freezer for a grab and go nibble later.
