Broc + Hemp Heart Pesto

The Super(wo)man of Pestos! Added nutrition, fiber, vitamins, minerals, and YUM! Make a double batch and keep it in the fridge for up to a few weeks!
Servings 2 cups

Equipment

  • cutting board, pot, strainer, knife, blender, measuring cups

Ingredients

  • 1 head broccoli (about 3 cups)
  • 1/4 cup hemp hearts
  • 1/2 cup lightly packed basil leaves
  • 3/4 cup olive oil OR
  • 1/4 cup olive oil +
  • 1/2 cup milk of choice
  • 1 lemon
  • Salt & pepper to taste

Instructions

  • Cut broccoli into florets. Add broccoli to a pot, fill with water, and boil. Let boil for 5-6 min, then drain.
  • While broccoli is cooking, prep the other ingredients.
  • Add broccoli and all other ingredients to the blender and blend until smooth. Add salt + pepper to taste.

Notes

HOT TIPS
Freeze leftovers sauce in ice cube trays for later
Spread on toast for a snack or drizzle over tomato + burrata salad
