Blender Spinach + Banana Pancakes
This 5-Minute pancake recipe is a time-saving, quick, healthy option for those days when time is working against you. There is zero need to resort to frozen waffles that lack nutrition as these can also be batch cooked and frozen and popped into a toaster!
Ingredients
- 1 banana
- 1 egg
- 1 handful frozen spinach (or frozen kale)
- 1/4 cup milk
- 1/4 tsp baking powder make it a little under 1/4 tsp
- 1/4 cup buckwheat flour
- 1/2 tsp maple syrup or vanilla Optional
Instructions
- In a blender mix banana, egg, spinach, milk, baking powder, and maple syrup (optional)
- Mix in the buckwheat flour by hand.
- Over medium heat, pre-heat the pan and melt some butter. Spoon 1/4 cup of the mixture. Flip it over once you start to see bubbles forming. Once you flip the pancake the other side will only need about 1-2 minutes.
To Serve
- We love to serve these with some "dip-dip" by mixing peanut butter and greek yogurt in equal parts.
- Top with some berries and any of our approved "sprinkles."
Notes
You must take measurements lightly and cook with your heart. We try to develop recipes that can be thrown together. As you make it more and more, it becomes easier and easier.
Additionally, take any extras and freeze them. Perfect to pop into a toaster oven for a late date.
